Pohnpei Fitness 5k

This past weekend was our monthly 5k fun run/walk.  This time it was the Pohnpei Fitness 5k put on by the local Rotary Club.  All the proceeds go to a scholarship fund, so it's a great way to support our students and get the morning started off.  We woke up to a pretty strong downpour, but it stopped just in time for us to make it over to Palm Terrace for registration.  Again, we only had to pay the typical $5 entrance fee to join in a really great race with t-shirts, snacks, and prizes.  What a deal!
A good number of people showed up despite the rain earlier in the morning.  Pretty promptly at 7am we did the countdown to the starting gun and we were off!
This picture's for you Papa ;)
It was a very nice run around the PICS loop with an out and back down Kaselehlie through the center of town.  Then we finished at Palm Terrace where chilled coconuts and a variety of delicious bananas were waiting for us!
Love my post-race treats!

Here comes Becca!
Laurel finishing strong!
Check out that finish by Lori & Cori Jo!
Even the former interim president and new president
of COM showed up to walk together
We all really enjoyed the race and then got to claim our great, free t-shirts and have some fun enjoying the post race festivities together.
Becca & B-more's first Pohnpei 5k!
The whole crew enjoying our coconuts and bananas
Then came the awards ceremony.  Umbrellas were given out to the top 10 overall finishers.
Nice job Edwin!
I think the PICS students have been training because
they really picked up the pace a bit!  I took 6th overall & this
makes for umbrella #3 for me
Trophies, another umbrella and a hat were given to the top finishers for several divisions: 1st place 12 & under, 1st place 18 & under, 1st place over 65, and then top male and female.
Umbrella #4 - you can't have too many in Pohnpei!
All the winners with the Rotarians
And this race had a real mango winner!  A couple of nights before, I was contemplating how I should incorporate mango into this race.  I decided I wanted to make use of the dried mango Laurel had gotten me from Hawaii.  I went to the official mango website for ideas, and it turns out you can just rehydrate them and use them like fresh mango.  I chose Mango Oat Breakfast Bars.  I re-hydrated the mangoes overnight so they would be ready to puree the next day.  It worked great!
Still so happy with my garage sale blender!
Mixin' up the oat part - this is a really easy recipe
Press the oat mixture into a baking dish, cover with
mango puree, and bake!
Ta-da!  Mango bars!
I so appreciate my friends that will get excited about
mangoes with me!
We all enjoyed them so much that I have to share the recipe so you can enjoy too: http://www.mango.org/recipe/mango-oat-breakfast-bars   Given that I'm in Pohnpei, I did make some substitutions to make it work with what I have.  For example, I used wheat germ instead of oat bran, apple sauce instead of butter, and totally omitted the walnuts.  Give them a try some time!  What a great discovery!!!

And this was all just the start of an all around great weekend.  I got to spend pretty much the whole weekend with 2 great, fun girls, Lori & Cori Jo.  We had the best time making tasty food, walking all around town discovering new places, watching The Gnome-mobile, and having a sleepover.  It was just what we all needed.

We even got to finish off the weekend with a potluck at church.  I love being surrounded by the body of Christ!  It's so refreshing and encouraging to see the love, generosity, and care poured out by everyone.  What a blessing to find this fellowship wherever I am.  Not to mention that they cook some really good food!
Quite the potluck!
I made Grandma's Banana Pudding...it's a hit!
We had a problem of people hoarding the desserts at the
last potluck, so they were off limits this time until the
dessert police gave the word.  I thought it was hilarious :)
 Another excellent weekend in Pohnpei!

Valentine's Day in Pohnpei

Many people had asked me if Valentine's Day is celebrated in Pohnpei.  My answer would be that it is recognized, but not widely celebrated.  Most people would just say "Happy Valentine's Day!", but I didn't see Valentine's being exchanged or anything of that nature.  I didn't let that stop me though!  I love any excuse to get festive, do some baking, and have a little fun.  This year I decided to go all out with the baked goods and share them with anyone who would dare to try to the strange pink and red creations.  I went with Cherry Chip Cakeballs, Cherry Cherry Cupcakes, and Strawberry-covered Chocolate Chip Cookies.
What's a Pohnpeian holiday without some Kool-aid?!
Get it?!  Strawberry-covered chocolate :)
The kitchen was overflowing with red and pink!

These turned out to be my favorite!
The day of Valentine's it was so fun to surprise co-workers, students, neighbors, and friends with festive treats!

I always feel like you should have Italian food on Valentine's Day.  And what could be better Italian food than my homemade pizza?  I whipped up a couple of crusts and had fun with the toppings.  Then I invited Maryanna and Jay-Jay to join our Valentine's date complete with pizza, dessert, and a movie!
Pizza #1 - Eggplant heart
Pizza #2 - Onion heart with eyes
After cooking and you can still see the
decoration!

Yum, yum, yum!
The full spread - my co-worker gave me that papaya just
harvested from the college's garden.  It was possibly
the best we've had!
We love pizza!
Love the papaya smile!
After dinner we headed over to see Alvin & The Chipmunks - Chipwrecked.  Tuesday is discount ticket night - perfect!  It turned out to be really cute, and we all really enjoyed it.  And we were thankful that the Adams family is willing to run their company generator all night to keep the movie theater going even when the rest of our neighborhood is in the dark.
Don't you just love the random assortment of letters
and numbers? ;)
I would say it was quite a nice Valentine's Day!

This has nothing to do with Valentine's Day, but I just have to note that s'mores are still being enjoyed in Pohnpei :)
Adding a little island flare with the banana leaf platter

I love free!

If you know me for any amount of time, you know that I love good deals and freebies!  Some call me cheap, but I prefer the term frugal.  :)  Over the past week I've had a lot of fun doing things for "free".

First event was a Cancer Fun Walk Saturday morning - no registration fee.  It was just to recognize World Cancer Day and raise awareness for the growing cases of cancer in Pohnpei.  We showed up nice and early on that beautiful morning at the local high school track.  A nice group of fellow community members gathered ready for the walk, but there was no sign of the event coordinators.  As start time approached, we were all looking around and wondering what was going on.  Then suddenly, promptly at 7am, a man who had been there most of the time pulled out a whistle and informed us we were going to stretch and then get started.  Apparently he was in charge of getting us to the Spanish Wall where everyone else would be waiting.  This is Pohnpei!
Where are the people in charge?!?!
*Whistle blow* "Let's get started!"
Oh, I guess he's in charge
We even had a police escort
As our leader yelled and whistled at us to stay together as one mob, we made our way down Kaselehlie Street to the Spanish Wall.  It's really fun to meet new people and feel like part of the community with my fellow walkers.
The event coordinators were indeed waiting for our arrival at the Spanish Wall.  They were actually still setting it all up, but it gave us time to do our cool down stretches, hear a couple of cancer awareness speeches, and watch a Pohnpeian drama by the teenagers.
I guess we walked a little faster than they were expecting

"Get in rows!  Get in rows!  We need to stretch!" yells the
enthusiastic man with a whistle.
Very informative speech about the most prevalent cancers
in Pohnpei and what we can do to help
After all the entertainment came the free t-shirts, bags, and snacks!  They get big thumbs up for this part because they had good sizes of shirts, nice bags with zippers, and delicious fruits for snacks - bananas, apples and oranges.
We're not sure about the ride and run part, but it's still a
great t-shirt
So happy to be enjoying our beautiful morning together
with tasty fruits to snack on!
That afternoon, I last minute decided to join some fellow volunteers on a swimming trip.  I really had no clue what we were going to, but I was offered a free ride and the chance to swim.  Count me in!  My free ride turned out to be a clown car, which was quite hilarious.  There were 8 of us crammed in a small car, but we made it.  We were at the Doldrums on Sokehs, and this is what I found...

The Doldrums
Great for climbing,
admiring the ocean blue water,
exploring,
rope climbing,
and jumping!
The water was refreshing, clear, and beautiful
Next time I need to bring my snorkel!

Being out there also gave us a new perspective of
Sokehs Island the The Rock
I was so glad a joined the impromptu swimming trip.  It was a nice break to just get away for a little bit of the afternoon.

This weekend was also the arrival of the new president of the College of Micronesia.  Everyone seems to be quite excited about his arrival and hopeful that he will get the college turned around and on the right track.  COM held an investiture ceremony on Monday afternoon and the we were all invited to a reception that night.  The invitation said free food, so I was in!  Of course I wanted to also meet the president and welcome, but free food is definitely a bonus.
Getting ready to be led in for the official welcome
Traditional dress leading the procession

The different skirts are from the different islands that
make up the FSM
My co-workers from Pohnpei and National Campus
Yes, we were part of the procession!
Pohnpei sure loves its signs
It was a very nice ceremony; the first of its kind for COM
Dr. Daisy giving his investiture speech
WorldTeach with the new president
There was poetry reading
and singing for our entertainment.
I also captured some of the best parts of the day on video:

So far I have been really impressed by President Daisy.  He has a very warm personality.  He has made it clear that taking this position is like a dream come true.  He seems to really care about the college and the people here.  I'm eager to see what he has planned for the college.  COM is up for review by the accreditation team in March.  Please pray that it goes well since much of the FSM depends on it as the only institution of higher education in the country.

To top it all of , our neighbor came over Tuesday night to drop off a deliciously sweet, juicy soursop that he had picked off the tree just for us!  I love my community of neighbors!
Bently with on of my new favorite fruits
in the world - soursop!
