1. Pancakes must be eaten at breakfast, lunch, and dinner.
2. I must have different pancakes to keep it unique and interesting.
I'll be honest, I start planning this pretty far in advance. It takes time to develop just the right menu so that you get a variety of pancakes throughout the day.
I kept it simple for breakfast because I wanted to focus more on lunch and dinner when I could celebrate with others. So I just made myself some simple, yet unique pancakes for breakfast.

Going Pohnpei style with the addition of the banana topping
Pancake #2: Spinach Pancakes (Most Unique Award)
Just blend up fresh spinach with egg, water, and flour.
Believe it or not, there is no food coloring in these; just spinach.

Lorenzo made it look so easy and even warmed up the whole pancake with the torch.
Christine with great focus to get just the right amount of toasting
